Hello summer!!

Hey there gang!! Well today is suppose to be the hottest day of the year with a heat index over 100 degrees YIKES!! You will definitely want to stock up on popcicles!! ~ Watermelon Salad ~

8 cups loosely packed torn Boston lettuce
2 cups seedless watermelon chunks (1 inch)
3/4 cup quartered cucumber slices
1/3 cup thin small red onion slices, separated into rings
1/3 cup KRAFT Lite Raspberry Vinaigrette Dressing
1 Tbsp. KRAFT Mayo with Olive Oil Reduced Fat Mayonnaise

Combine first 4 ingredients in large bowl.

Whisk dressing gradually into mayo until blended.

Add to salad; toss to coat.

Cheese Stuffed Grilled Peppers & more goodies!!

I found this amazing recipe for Cheese Stuffed Peppers. And you can just about always find bags of these peppers at Kroger for under $2, they make delicious snacks and sometimes I chop them up for fajitas but, I can't wait to try this recipe with them.  If you try it, let me know what you think.

~* Cheese Stuffed Grilled Peppers *~

INGREDIENTS

1 cup ricotta cheese (8 ounces)

1 cup cream cheese, at room temperature

1/2 cup freshly grated Parmigiano-Reggiano cheese

Salt and freshly ground pepper

4 Anaheim or Cubanelle peppers

4 baby bell peppers

4 small poblano chiles

Extra-virgin olive oil, for rubbing

DIRECTIONS

 In a medium bowl, blend the ricotta with the cream cheese and Parmigiano-Reggiano. 

Season with salt and pepper.

 Light a grill or heat a grill pan. Using a small, sharp knife, remove the stems from the peppers and reserve. Cut around inside the peppers to detach the membranes and remove the seeds. Using a butter knife, fill the peppers with the cheese mixture and reattach the tops. Rub the peppers with olive oil.

 Grill the peppers over moderately high heat, turning occasionally, until blistered all over and the cheese filling is piping hot, about 7 minutes. Transfer the peppers to plates and serve.

MAKE AHEAD

The cheese-filled peppers can be refrigerated overnight. Bring to room temperature before grilling.

This recipe yields 4 and takes 30min to make, Enjoy!!

Hello Again... Coupons, Laminating Machine, and More!!

Hey gang!! I know it's been awhile since I've posted coupons. I kinda let myself get into a slump with searching for them. But now I'm back at it in full swing and have quite a bit to share with you today!! Also while I was searching I came across this laminating machine that's on clearance at Carol Wrights. I couldn't believe it's only $1.99!! Being that it's on clearance it may sale out fast so you might want to jump on this one!!

And here are the coupons that I've found.  Many of these you can print out and if you use your backspace on a couple of them you can print them twice *wink wink*. Also be sure to check out the Red Plum coupons.  Just a couple tips ~ There is a $1 off coupon for Jimmy Dean bacon but it isn't coming up for all zip codes so if it doesn't come up for you, try my zip code 46517.
